Pork loin is lean tender meat attached to the ribs along the back of the pig. When they talk about eating high off the hog, this is the cut they mean.
 
The pork chops are stuffed with either a sausage stuffing, rice dressing, or cornbread dressing.
 
The pork roasts and loins are stuffed with onions, bell pepper, and garlic. Yum!
